A beautiful 4* Hotel situated in the grounds of an historic Wine Estate in the Stellenbosch area is searching for a highly experienced
FOOD AND WINE MANAGER.



Reports to :
General Manager


The Food and Wine Manager is responsible for developing the strategic and operational direction and annual plans for Food and Wine operations, specifically including the Kitchen team, befitting a Village Farm Hotel, across the organisation.

The Food and Wine Manager works closely with the senior leadership teams of the organisation to ensure Food and Wine operations support and are aligned with the wider objectives of the organisation.


The role creates the systems and conditions that enable the Food and Wine operations to provide guests with outstanding Food and Wine services that are of exceptional quality, and aligned with the Food philosophy of the organisation.


The Food and Wine Manager is responsible for coordinating the development of the organisation wide annual plans for the Food and Wine operations.

This includes the supporting budgets, manning needs and CAPEX requirements.


The role works closely with Heads of Department and the Food and Wine leadership to ensure the implementation of plans and successful execution of the strategic intent of the Food and Wine function.

The Food and Wine Manager monitors the performance of Food and Wine operations across the organisation, ensuring that the Food and Wine team continuously develops and displays, at all times, the level of competence, professionalism, excellence, protocol and etiquette that is expected at the hotel

General Responsibilities

  • Develop policies, processes and standards to ensure effective highquality Food and Wine service is provided to guests
  • Develop and implement key Wine focused offerings in collaboration with the Company's Wines team to support the brand
  • Codevelop and operate dialogue and meeting room offering
  • Develop and implement processes to understand the Food and Wine needs and expectations of guests
  • Develop and implement processes that facilitate immediate response to Food and Wine requests received from guests
  • Provide direction, oversight and guidance to the Food and Wine teams
  • Develop the company wide annual plan and activities for the Food and Wine departments
  • Assist the Human Resources function in attracting and selecting suitable employees for the Food and Wine functions
  • Develop with senior Food and Wine leaders, housekeeping and the stewarding department effective parstock levels for utensils, chinaware, glassware, flatware, hollowware, cutlery, table linen and other items required for the operation of Food and Wine departments
  • Ensure Food and Wine departments implement all relevant security and health and safety policies, processes and procedures ensuring compliance with local legislation
  • Develop and ensure implementation of an effective key control system for areas relevant to the Food and Wine department, ensuring safety and security of residents, equipment and supplies
  • Facilitate communication and collaboration of Food and Wine leadership teams across the organisation
  • Establish and maintain effective working relationships with suppliers of Food and Wine supplies
  • Develop processes to monitor the performance of contractors that provide services to the Food and Wine function
  • Ensure to remain up to date with the latest development in Food and Wine services, equipment and trends

  • Ensure Food and Wine functions across the organisation provide impeccable customer service to guests and Hotel Teams consistently
  • Prepare regular reports for management, indicating the status and performance of the Food and Wine department
  • Include Food and Wine performance data and indicate how this compares to the set targets

  • Effectively lead the Food and Wine leadership team by being a positive role model of the hotel values, providing a common vision and effective communication
  • Ensure the development of a culture of service excellence and delivery among the senior Food and Wine team so they take pride in what they do, take personal responsibility
