Experience
• Start-up check – Ensure that quality standards such as good manufacturing practices
are maintained and well followed before production commence.
• Scales and Thermometer verification- To ensure that scales and all lab equipment’s
are in a good condition and working properly before production startup.
• CCP Verification- Flour sifter, Yeast strainer and metal detention. Checking of flour sifter
and yeast strainer hourly during production, they must be intact and work accordingly.
Verification of metal detector to ensure that no metals can be found on a final product.
• Critical to Quality Checks- Checking of dough and baking temperature as it can cause
a major damage on a final product as well as mixing time and baking time.
• Final product verification – Checking color, weights and dimensions on every product
running, these measures must be within specification. Lab tests( water activity, TTA,
moisture content etc.)depending on a product running.
• Date coding and labelling must be clear and legible on a package.
