About Jana de Kock:

I am passionate about winemaking and the industry. I am a hard worker and have the ability to learn new things with ease. My goal is to become a winemaker who creates top quality wines. I enjoy challenges and thrive in situations where I am pushed out of my comfort zone, especially when there’s knowledge or experience to gain. 

Experience

  • Grape sampling
  • General cleaning practices, including tanks, press and barrels.
  • BRIX with Hydrometer, Refractometer, and Anton Par pH, TA, and SO2
    pH and Ta of Juice to assist the winemaker with any Acid adjustment
  • Offloading of Grapes with strict additions according to winemaker specification and worksheet.
  • Racking of Juice pre-fermentation
  • Adding settling additives to white must.
  • Racking of settled or Flotation juice.
  • Balling and temperature measurements (morning and evening) of all fermentation tanks to decide on nutrition additions according to the YAN of the fermenting wine.
  • Yeast re-hydration and addition according to the strict re-hydration process.
  • Malolactic bacteria inoculations and drawing of samples weekly to follow the Malolactic fermentation.
  • Filling and racking of Barrels.
  • Keeping Punch down and Pump-over schedule according to the fermentation.
  • Leading and Assisting the Punch down and Pump-over team.
  • Racking of Red wine post-fermentation.
  • Pressing of Red skins post-fermentation
  • Racking of Red wine after Malolactic fermentation. SO2 adjustment according to the winemaker worksheet.
  • Preparing barrels for filling. Filling Barrels before storage.
  • Drawing of samples.
  • Tasting of wine with Cellar master
  • Making of own Red wine on a small scale (1-ton ferments)
  • Mobile bottling: Preparing wine, measuring Dissolved Oxygen in the wine and on the line.
  • Measuring fill height, Ullage pressure, and cork depth according to bottling Temperature.

Education

I obtained my degree in Bsc Agric Viticulture and Oenology in 2022 from Stellenbosch University. I also completed a wine evaluation course through the university.
