Experience

I have completed my Advanced Butchery Course with 100% pass rate at SA Butchery Training School in September of 2022. Since then, I have been a full-time employee at Chalmar Beef. I started my career at Chalmar Beef as a Meat Plant Apprentice. I started in the deboning department furthering my skills in breaking of Beef Quarters, Lamb Carcasses and trimming of primal and sub-primal cuts to specification. After two months I have been moved to the portioning department where I got promoted to a Portioning and Processing Supervisor. In the Portioning department I took responsibility for managing the department and ensuring that customer orders were met by the deadlines. Opening and closing of daily production batches and monitoring the yield percentages for those batches. Cutting of portions to specification for both the local and export markets. Ensuring that the Portioning and Processing departments achieved good results in hygienic swaps and that the hygienic standards are met after every daily production. Closely monitoring stock levels and ensuring that the FIFO method is followed at all times. Working according to weekly sales of portions to determine the holding stock of various cuts. Monitoring of stock through a weekly stock take.
