Are you an experienced Food & Beverage professional seeking an exciting opportunity in a prestigious 5-star luxury game lodge? Look no further Kendrick Recruitment are currently recruiting for a Food & Beverage Duty Manager based on the outskirts of Hoedspruit town.


Key Responsibilities:


Kitchen:

Take charge of our Pan African Cuisine by maintaining the highest standards and ensuring the preparation of exceptional dishes.

Collaborate with the Lodge Manager and Head Chef to develop new menus and dishes. Control food supplies, maintain recipes, and ensure the kitchen operates smoothly. Foster a creative and world-class culinary environment.

Food Stock Control:
Maintain the Food Cost per Guest in line with budget allocations. Oversee the food cost system, conduct stock takes, control budget lines, and ensure portion control. Manage suppliers, negotiate prices, and source new suppliers as needed.

Guests Delight Service:
Ensure the smooth and efficient running of the Dining Room and Boma during service times. Interact with guests to understand their needs, build relationships, and deliver exceptional service.

Promote a culture of guest care and interaction within the Guest Delight Service Team, creating memorable experiences for our guests.


Beverage Control:
Oversee the Stock Control Division, implementing and maintaining a daily Stock Management & Control System. Ensure adequate stock levels, manage stock takes, handle purchasing, and maintain the storeroom, cellar, and fridges. Meet or exceed sales targets and contribute to the overall beverage operations.

Management of the Guest Delight Service Teams: Lead, motivate, and develop the team to deliver outstanding service. Ensure the right people are in the right positions, promote a guest-focused mindset, and foster a learning culture. Recognize and address guest feedback effectively and manage staff performance and leave cycles.

People/HR:
Manage staff leave cycles, training files, and disciplinary matters. Develop and train staff, promote staff welfare and morale, and maintain good staff hygiene and appearance.

Personality:
Exhibit excellent communication and interpersonal skills, a positive attitude, and self-motivation. Possess a sense of humor, adventure, and fun.

Specific Job Skills:
Be energetic, proactive, and passionate about providing a world-class guest experience. Demonstrate strong people skills, work well under pressure, and have experience working with diverse teams.

Computer Skills:
Possess IT skills and be computer literate.

Team Player Ability:
Show flexibility, strong time-management skills, and the qualities of a reliable team member.


Requirements:

Diploma in Hospitality or Lodge Management.

Minimum of 3-5 years of Hospitality/Food & Beverage experience in a 5-star boutique operation or Big 5 reserve within a similar lodge environment.

Professional culinary experience and menu development skills are advantageous.
Strong stock control experience in both food and beverage.
Hospitality and service training experience.
Extensive purchasing experience.
Passion for food, people, and service.
Code 8 Driver's License.


Package Details:


Monthly package:
R12,000 - R15,000 per month
Live-in position with meals on duty.
Pension fund.
Staff bed nights.

Work cycle: 21 days on, 7 days off.


Annual leave: 15 days.
