JobResponsibilities and Activities
· Toput in place an effective Production plan
· Proposemenus for tender presentations
· Buildingof recipes
· Reviewcycle documentation (specs/menu grid)
· Adjustproducts with supply chain based on availability and other elements
· Adjustyields
· Effectivelylaunch new cycles and provide training and awareness for each cycle
· Carryout quality checks as per schedule for client and internal
· Conductmeal tastings as per schedule published and document the results
· Toensure that the utmost care is taken during preparation of food, taking intoaccount,
taste, quality, garnishing, and presentation.
· Mustbe able to develop menu's and recipes
· Toensure effective food cost reduction
· Toeffectively reduce wastage
· Tooversee production processes
· Toplan and organize the repair and routine maintenance of production equipment
· Toset product quality standards
· Monitorquality standards of products
· Workclosely with the QAQC department to ensure that QC measures are being adheredto
· Ensurethat the teams are using the correct specifications
· Ensurethat cycle changes are communicated to the teams timeously and
· Thecorrect cycle change specification is used from the day 1
· Youmust have a significant input in food cost reduction
· Ensurethat wastage in Production is always at its minimum
· Ensurethat each department adheres to the daily completion of the CCP records
· Ensurethat the entire Production adheres and complies to the company's HACCP Policy'srules
and regulations including, but not limited to: personal hygiene, CCPdocumentation,
food storage, hand-washing rules and regulations, glove policy,sickness policy.
· Adhereand comply to the company's Health & Safety Policy's rules and regulations
· Ensurethat the Electronic Tablets are used correctly and effectively on a daily basis
· Anyother reasonable task that may be required by management
Perfil
Qualifications
· Grade12
· BDegree in Production Management
· Qualificationsas an Executive Chef an advantage
