A well-established upmarket restaurant is looking for a Head Chef to join their team on a full-time permanent basis on a beautiful wine farm in Durbanville, Cape Town.
The position includes weekend shifts and offers a very good compensation package plus internal career advancement opportunities.
Position Overview:
The Head Chef will have full responsibility for all kitchen operations, leading the team while remaining actively involved in daily service.
This role demands consistently high food standards, strong cost control, and strict adherence to health and safety regulations. It is a hands-on leadership position within a fast-paced, quality-driven environment, combining cooking, menu development, and operational management.
Requirements:
- Extensive experience in a senior kitchen leadership role
- Previous experience as a Head Chef or Senior Sous Chef
- Relevant culinary qualification required, with verifiable references
- Extensive experience is essential; only suitably qualified candidates will be considered
- Strong leadership, people-management, and organizational skills
- Excellent cooking and plating skills
- Sound knowledge of food costing, stock control, and kitchen operations
- Own reliable transport
Key Responsibilities:
- Lead, manage, and motivate the kitchen team
- Oversee all food preparation, quality, consistency, and presentation
- Develop, create, and cost menus aligned with the bistro's concept
- Design seasonal menus and daily specials
- Manage ordering, stock levels, suppliers, and food costs
- Control food waste and ensure the kitchen operates within budget
- Plan and execute daily service to a high standard
- Ensure effective coordination between kitchen and front-of-house teams
- Food Safety & Compliance:
- Ensure full compliance with health, safety, hygiene, and HACCP regulations
- Maintain excellent standards of cleanliness and kitchen organization
- Monitor food storage, labeling, and stock rotation
- Train staff on food safety and hygiene procedures
- Stock & Cost Control:
- Conduct weekly stock takes
- Monitor GP targets and food costs
- Minimize waste and operational losses
- Place and manage all kitchen-related orders
