Description

A consortium consisting of a few restaurants in the Gauteng area is seeking an experienced retaurant Operator to run the entire restaurant operations from start to finish.

This person will be in charge of the day to day operations in the restaurant which will include the following:
The Operator is responsible to ensure that the day to day business is conducted effectively at the restaurant which includes the following responsibilities:
Timeous arrival at the shop before all employees arrive on a daily basis and conclude the following checks


BACK OF HOUSE CHECKS

  • Temperature checks
  • Gas meter readings (previous vs current)
  • Daily water meter readings
  • Conduct daily maintenance walkthroughs (ensure all equipment is up and running and that there are no faults)
  • Proceed to check stock
  • Proceed to check the daily prep sheets and compare with actuals. Correlate with what is required in the sections.
  • Check on perishables to ensure that all are fresh especially in the sushi bar

FRONT OF HOUSE CHECKS

  • Check up on variances (shortages / overs and unders)
  • Check on cash ups (check if cash / card balances / voids / slips)
  • Check on fruits that need to be issued.
  • Check that all is in order in all sections and take the necessary action to resolve any issues (maintenance / hygiene)
  • Open the restaurant for trading daily.

PRE-PLANNING

  • Draft up employee shift rosters for back of house and front of house along with the assistance of the General Manager, which is signed off and approved by the Operator.
  • Facilitate stock orders where required.
  • Ensure that in the event where the shop reaches peak, that adequate employees are allocated to work and that stock is in order to accommodate capacity business.

FINANCIAL RESPONSIBILITIES

  • Sign off and approval of daily payment schedules.
  • Sign off and approval of daily waiters tip calculations.
  • Sign off and approval of monthly payroll.
  • Reconciliation of bank statements and payments.
  • Daily release of payments from the Bank.
  • Weekly reporting of payments to Reinhardt Paulssen
  • Preparation of weekly cash collections as well as packing thereof in a tidy manner.
  • Exporting of invoices on the payment schedule which includes checking of invoices as well as releasing of payments on the bank.

EMPLOYEE RELATED RESPONSIBILITIES

  • Sign off and approval of any new employees along with the assistance of the General Manager.
  • Provide daily on the job training as well as assist with employee upskilling.
  • Facilitate the necessary IR processes such as disciplinary hearings, grievances, issuing of formal discipline in the form of warnings and suspensions.
  • Monitor employee attendance and pull monthly attendance registers to be shared with payroll by the 20th of each recurring month.
  • Monitoring of employee leave as well as the requisite approval / decline of leave requests during offpeak and peak months.
  • Devise employee incentives to drive outstanding performance as well as payment thereof.

STOCK & FOOD COST RESPONSIBILITIES

  • Conduct a full stock take monthly.
  • Assist and approve with the necessary ordering of new stock required.
  • Elimination of any wastages and driving food cost down as far as possible.

GENERAL RESPONSIBILITIES

  • Ensure that all operations in the shop are in accordance with franchise standards.
  • Implement the necessary hygiene practices to ensure that the restaurant adheres to the strictest of hygiene standards.
  • Participation in weekly employee vibe meetings.
  • Conduct weekly management meetings.
  • Coordinate the necessary booking schedules with all departments in the restaurant to ensure that any such bookings are planned and accommodated for.
  • Oversee daily prep sheets and checklists and ensure strict adherence to such.
  • Facilitate Marketing correspondence and implementation thereof.
  • Ensure that all equipment in the restaurant is working and if necessary, book the required maintenance for faulty equipment.
  • Sourcing of new suppliers as well as liaison with current suppliers regarding price negotiations on a group level.

CUSTOMER FACING RESPONSIBILITIES

  • Conduct regular floor walks around the restaurant to ensure that all departments are running effectively.
  • Engage with customers and deal directly with customer compliments, complaints and queries.

Salary:
R28 000,00 - R32 000,00 per month


Ability to commute/relocate:

  • Sandton, Gauteng: Reliably commute or planning to relocate before starting work (required)

Experience:

Restaurant Management: 7 years (required)
