Food Safety Controller to
join our
Baking Division, the role is based in
Pretoria West and will report to the
Senior Quality Assurance Technologist.


This position exists to coordinate & control activities relating to food safety.


Duties & Responsibilities:


Administrative
Ensure on-going compliance of documentation related to FSSC 22000.

Validate traceability by verifying correct premix process records are available at points of use. Maintain training records for annual food safety training of personnel.

Compile internal audit reports.

Compile supplier audit reports.

Monitor quarantine systems.

Creating and maintaining of daily returns records.

To record and trend corrective actions.

To document recalls and mock recalls, as well as subsequent corrective actions.

To document and maintain records of internal audits, as well as subsequent corrective actions.

Maintain records of external audits.

Filing and keeping documents up to date.

Preparation, compilation and timely distribution of documents (trends, graphs, reports etc.) for food safety related meetings.

Reporting of FS related results for inclusion into trend analysis and reports.


Customer Relations
Understand and help with customer queries and requests.


Safety and Food Safety
Create awareness regarding food safety.
Develop and implement food safety behaviour.
Develop and implement food safety procedures.
Develop and implement food safety checklists.
Plan, coordinate and conduct internal food safety audits. To ensure monthly audits are performed on site. Status of each department measured against goals (>95% average).
Plan, coordinate and conduct depot audits when necessary.
Plan, coordinate and conduct oil plant quarterly and measured against goals (goals set after each audit).
Ensure daily capturing of returned stock as per procedure.
Ensure correct allocation of returned stock as per procedure.
Reporting on allocation, quantity and status of returned stock.
Follow-up on non-conforming product allocation.
Conduct or ensure FSSC 22000 training for current personnel and new personnel.
Sample taking for food safety related and QC analysis.
Quarantine / Release of product on Introspect.
Quarantine / Release of product in storage areas.
Delivery vehicle inspections and subsequent release or rejection thereof.
Investigations in the facility resulting from food safety incidents.
Conduct "on the job" food safety training when required.
Plan, coordinate and conduct internal document audits and ensure subsequent corrective actions are implemented.
Plan, coordinate and conduct supplier audits and ensure subsequent corrective actions are implemented.
Plan, coordinate and actively participate in external supplier audits.
Manage corrective and preventative actions resulting from external supplier audit findings.
Plan, coordinate and actively participate in annual external certification and surveillance audits.
Manage corrective and preventative actions resulting from external certification and surveillance audit findings.
Annual review on traceability of products.
Follow-up on corrective actions resulting from customer complaints


Minimum Requirements:

National Diploma in Food Technology / Biotechnology

ISO / FSSC management
3 years + food safety experience
3 years + auditing experience
Computer literacy courses
Auditing courses
