Restuarant Manager

  • Ensure the entire smooth running of the store to ensure that the store is running at optimal efficiency. Conduct daily procedures and checks to ensure that everything is in working order.
  • Manage the IT and systems at the site to ensure that they are working at all times. This includes the Micros system, GAAP system, Dine Plan issues, ERS Biometric system, music system and CCTV system. Here, if there are any issues, notify directors and arrange for suppliers to fix any problems quickly and efficiently.
  • Ensure that the site aligns with and embodies the set out vision for the brand of the site. This includes all elements such as uniforms, décor, menus, and overall look and feel of the site.
  • This role is responsible for any and all maintenance that needs to be completed in the store. This includes managing any equipment maintenance, furniture updates or repairs, plumbing, major cleaning maintenance and any other store related maintenance and repairs that need to be completed. This also includes finding a party to complete this work as well as managing this within given business deadlines and budgets.
  • Ensure that all compliance is 100% up to date at all times. This includes ensuring that extraction is maintained and cleaned, fire equipment is up to date, the liquor license is updated and renewed and SAMRA / SAMPRO music legislation is up to date. This must be done regularly and at the required timeline for each element of compliance. In addition, this role needs to ensure that all compliance documentation and posters are properly displayed in the site.
  • As part of compliance, complete the daily back of house and front of house checklists to ensure that the store is compliant with the health and safety regulations and requirements. This includes cleanliness, hygiene, and stock rotation.
Cost and Cash Management

  • Responsible for cost management of both food and drinks. This includes managing the expenses to achieve the desired gross profit for the store for all food and drinks purchases.
  • Ensure that the store is cashedup at the end of each day / night. This includes cashing up each waiter and aligning this with the overall cash up of the store. The appropriate procedure for all methods of incoming payments must be followed, such as populating the source documents for all monies received and banking all cash for the day.
  • Manage the store budget to ensure that all operating expenses are aligned with this and that the store is achieving its sales target for each quarter. This includes managing any costs that need to be managed for the store.
Stakeholder Management

  • Manage the relationships with all store suppliers for both food, wine and liquor. This includes ensuring that the relationships with suppliers run smoothly and efficiently. Additionally, ensure efficient management of deliveries, stock shortages, as well as any issues with the supplier. Additionally, notify the stock controller about any key shortages or issues that are being experienced.
  • Ensure that all suppliers are certified and adhere to compliance rules and regulations.
  • Manage the relationships with all service providers to ensure that the business works with reputable providers who can complete their work to the desired standard.
People Management

  • Ensure that all staff are following the required security procedures such as checking in and checking out each day. This includes manging who comes into and out of the store at both the front of house and back of house. Additionally, this includes managing security guards and ensuring that they are completing their required duties.
  • Ensure that all staff are following procedures for their relevant roles and holding them accountable to this. This relates to all health and safety protocols and job specific duties that need to be carried out. Importantly, the responsibility and onus falls on the GM/AGM to ensure that this is being done to the required standard.
  • Ensure that all staff adhere to the site dress code and are compliant to the brand of the business. This includes ensuring that staff look presentable.
  • Provide support to store staff to ensure that they are able to complete their roles and responsibilities effectively. This includes monitoring their work and ensuring that the staff are supported when there are problems or unique issues to deal with.
  • Identify any vacancies that are needed in the store and notifying head office about this need. This includes being involved in the recruitment and selection of new staff members and attracting the right talent.
  • Onboard all new staff effectively into the store. This includes ensuring that all training, paperwork and induction is completed to ensure that the new staff member is fully equipped and trainline to effectively perform their role.
