    Description

    Our client in the dairy industry requires a Cheese Maker in Elliot.

    Duties & Responsibilities:

    Responsible for the standardization and pasteurization of milk to produce first grade cheese by conforming to the microbiological and analytical requirements and procedures.

    Ensure Factory and Equipment is correctly cleaned and sanitized daily after production.

    Conduct daily inspections of all production areas for minimized losses and maximized cheese yield.

    Conduct all necessary milk tests, check availability of ingredients and packaging and ensure production goes accordingly.

    Manage and yield waste, report any non- conforming products and process to the Plant Manager and form part of the Grading Team.

    Record accurate completion, verify all records of the daily production to identify flag problems.

    Monitor accurate usage of machinery and equipment and ensure preventive maintenance is done.

    Take in-line milk samples to the laboratory for micro-biological and analytical testing and process control.

    Ensure the cleaning process is followed - cleaning out of place (COP) is performed before start of cleaning in place (CIP) and verify that chemicals used are on strength.

    Factory hygiene - clean swab results on food contact and non-food contact surfaces. Ensure high level of hygiene in the area throughout production.

    Food Safety - Monitor all ingredients used in production, batch numbers, expiry dates, raise CAR's for any non-conformances and maintain production targets.

    Abide to proper food safety work instructions and procedures (incl. food safety PPE) and cleaning equipment according to set colour colour-coding.

    Quality Control - Handle non-conforming products and align to target dates.

    Staff Management - Work out shifts according to production, provide ongoing training and evaluation for production staff and monitor discipline.

    To ensure that all Health & Safety policies and procedures are adhered to at all times by all employees.

    Desired Experience & Qualification:

    Qualified Cheese Maker

    National Senior Certificate ( Grade 12)

    Minimum 3 years cheddar and mozzarella cheese making experience

    Sound communication skills ( written & verbal)

    Good hand-eye co-ordination

    Highly analytical and problem solving abilities

    Numerical and critical decision making skills (essential)

    Quality focused, efficiency and product knowledge oriented (essential)

    Time management and record keeping (essential)

    High attention and detail orientated with a prolonged attention span (essential)

    Remuneration :R25,000 - R35,000 per month -Qualification and experience dependant
