Main Outputs and Responsibilities for This Position

  • Set operating goals and objectives and execute on the plan
  • Effective staff recruitment and induction
  • Train and coach staff
  • Prepare and implement standard operating procedures for the restaurant in line with company policies and procedures
  • Manage staff performance in accordance with established standards and procedures
  • Ensure staff know how and adherence to established codes of practice
  • Organize and monitor staff schedules and associated costs
  • Maintain employee records in line with company policies and procedures
  • Coordinate restaurant operations during each shift
  • Adherence to health, safety and hygiene standards in kitchen and restaurant
  • Keep records of health and safety practices
  • Ensure compliance with restaurant security procedures
  • Ensure alcohol regulations are adhered to
  • Interact with customers and drive repeat business
  • Oversee quality and preparation of food and beverage items
  • Ensure adherence to set recipes
  • Ensure quality of food and beverage presentation
  • Manage profitability of restaurant exceeding targets
  • Interact with customers to ensure all inquiries and complaints are handled promptly
  • Manage food and beverage costs
  • Effective and accurate ordering, receiving and receipting of restaurant consumables
  • Ensure cash management procedures are completed accurately and timeously
  • Achieve financial targets
  • Analyze budget variances and take corrective actions
  • Establish and implement financial controls
  • Effective cost management in line with restaurant approved budgets
  • Meet and exceed restaurant sales and revenue
  • Develop and drive local store marketing activities
  • Maintain business records
  • Prepare and analyze management reports
  • Determine and execute operating improvements
  • Monthly financial commentary for management pack
  • Negotiate and maintain purchase prices
  • Schedule food and beverage deliveries
  • Check quality of deliveries and documentation
  • Ensure correct storage of supplies
  • Arrange for maintenance and repairs of equipment and services
  • Identify and evaluate competitors
  • Keep current with trends in the restaurant industry

Formal Education

  • Tertiary qualification preferred, Minimum 5 years' experience in food and beverage management

Experience

  • Experience in managing all aspects of a profitable restaurant and a diverse team
  • Experience in staff management and development
  • Knowledge of basic accounting principles and practices
  • Proven track record in managing profitability of restaurants
  • Track record of managing inventory and cost control
  • Indepth working knowledge of alcoholic and nonalcoholic beverages
  • Indepth working knowledge of food preparation and presentation
