    Key Responsibilities

    • Conduct daily food quality checks in all preparation areas, adhering to company standards.
    • Maintain regular meetings with the Executive Sous Chef, Sous Chef, and Chef de Partie to discuss production forecasts and schedules.
    • Communicate closely with the Dining Operation Manager to verify guest food acceptance and special requests.
    • Collaborate with the Inventory Officer/Provision Master to manage weekly inventory and identify slow-moving and fast-moving items.
    • Ensure that food preparation adheres to company recipes and USPH/Internal Health standards.
    • Oversee cleanliness of all food preparation areas, conduct PH inspections, and maintain USPH/Internal Health standards.
    • Participate in meetings and keep the Hotel Director/F&B Director informed of any operational issues or problems.
    • Assist in finalizing food orders for future cruises, in accordance with company standards.

    Qualifications

    • A minimum of 15 years of experience in large multi-outlet operations or 6-8 years in a similar position.
    • Culinary Art degree from a professional hotel school or equivalent qualification preferred.
    • HACCP Certification (USPH Course Certification advantageous).
    • Fluent English speaker, with knowledge of other languages such as Italian, Spanish, French, German, or Portuguese beneficial.
    • Safety-conscious individual who understands and respects rules, promotes sustainability, and takes proactive steps to ensure personal safety.
    • Able to work effectively within a harmonious team environment.
    • Proficient in computer skills, including Microsoft Word, Excel, and Outlook.
    • Adaptable and open to change, supporting company-driven initiatives and identifying opportunities for growth.
    • Excellent management and problem-solving skills.
    • Strong communication skills and stress tolerance.

    • Police Clearance certificate.

    Estimated Salary: $60,000 - $80,000 per annum.
