    JUNIOR SOUS CHEF
    Luxury Lodge / Hospitality Environment, 5* lodge near Hluhluwe, KZN

    Are you a passionate, hands-on chef ready to grow within a world-class hospitality brand? We're looking for a Junior Sous Chef who leads by example, loves great food, and thrives in a guest-focused, high-standard kitchen.

    KEY OUTPUTS & RESPONSIBILITIES


    • Maintain the highest health, hygiene & HACCP standards
    • Ensure correct use of cleaning chemicals & stock availability
    • Oversee quality & quantity control of all food leaving the kitchen
    • Lead and manage the Pastry Section
    • Handle bush banqueting, picnics, drink stops & checklists
    • Strong stock control, rotation & food cost awareness
    • Manage special dietary requirements with a guest-first approach
    • Promote innovation, flexibility & a positive kitchen culture
    SKILLS & EXPERIENCE REQUIRED


    • Strong communication skills with guests & team
    • Excellent organisational & problem-solving ability
    • Professional under pressure
    • Solid HACCP knowledge (PANstrat advantageous)
    • Passion for mentoring and training staff
    • Strong pastry skills with high-quality dessert experience
    • Minimum 3+ years relevant experience (hot & pastry sections)
    • Passion for food, kitchen management & administration
    • Valid, unendorsed SA Driver's Licence (essential)
