Kitchen Manager

Management of Cost of sales practises for food and drink to minimise any incorrect usage of any resources with particular attention given to achieving GP% and minimising variable expenses.
Together with back of house manager and front of house manager confirm stock and menu item availability.
Conduct daily stock counts as per company procedure.
Capture all stock counts on the restaurant managements system.
Together with the BOH Manager address and action on all stock variances from stock count.
Together with stock controllers, confirm all orders for food items and ensure stock levels are constantly maintained at all times.
All stock in stations to be stored according to company policy (all stock off the floor and practise FIFO and perishables have dated stickers).
Together with BOH Manager / FOH Manager plan and coordinate training schedule of kitchen staff on new menu items or menu changes.
Authorise all staff rosters and ensure there is always adequate cover in the most effective manner.
Manage the planning of resources and complete the requisition with Human Resource.
Manage and ensure that all new staff members complete an onboarding and induction process.
Conduct regular meetings with front of house managers.
Manage the training and development of all current and new staff and complete all administrative responsibilities.
Maintain cleanliness and hygiene standards of all stations.
Report on any maintenance issues in stations.
Set a good example for staff with regards to punctuality, attendance, attitude, and hygiene.
To maintain a harmonious work relationship between yourself and the entire restaurant team

- conduct mediation sessions during times of conflict or misunderstanding in the team.

Manage and drive staff motivation and overall staff engagement by constantly providing feedback and guidance.
