Kitchen Manager

  • Management of Cost of sales practises for food and drink to minimise any incorrect usage of any resources with particular attention given to achieving GP% and minimising variable expenses.
  • Together with back of house manager and front of house manager confirm stock and menu item availability.
  • Conduct daily stock counts as per company procedure.
  • Capture all stock counts on the restaurant managements system.
  • Together with the BOH Manager address and action on all stock variances from stock count.
  • Together with stock controllers, confirm all orders for food items and ensure stock levels are constantly maintained at all times.
  • All stock in stations to be stored according to company policy (all stock off the floor and practise FIFO and perishables have dated stickers).
  • Together with BOH Manager / FOH Manager plan and coordinate training schedule of kitchen staff on new menu items or menu changes.
  • Authorise all staff rosters and ensure there is always adequate cover in the most effective manner.
  • Manage the planning of resources and complete the requisition with Human Resource.
  • Manage and ensure that all new staff members complete an onboarding and induction process.
  • Conduct regular meetings with front of house managers.
  • Manage the training and development of all current and new staff and complete all administrative responsibilities.
  • Maintain cleanliness and hygiene standards of all stations.
  • Report on any maintenance issues in stations.
  • Set a good example for staff with regards to punctuality, attendance, attitude, and hygiene.
  • To maintain a harmonious work relationship between yourself and the entire restaurant team
- conduct mediation sessions during times of conflict or misunderstanding in the team.

  • Manage and drive staff motivation and overall staff engagement by constantly providing feedback and guidance.
  • Carry out all duties as instructed by management
