Full Job Description
- Manager fully responsible for Kitchen (BOH) but not limited to BOH only, to operate Front of house as well
- Deal with all aspects of service
- Manage bookings and table rotations
- Support and develop a small competent Front of House team
- Manage the floor housekeeping with an eye for detail
- Develop the team's menu and product knowledge
- Manage FOH stocktake
- Oversee POS, cash ups and produce sales reports
- Manage the hygiene and safety rules for the venue
- Manage with backofhouse office functions
- To ensure that all Menu Products and functions are correctly prepared, cooked and served.
- To ensure that foodstuffs are used correctly so that wastage is kept to a minimum, and staff are trained to effect good portion control.
- To rearrange duties and rosters as necessary to ensure that all tasks are correctly and timeously completed.
- To ensure that the preparation of food is hygienic and that a "clean as you go" discipline is adhered to.
- To ensure that company and statutory hygiene standards are maintained.
- To ensure that all kitchen staff are clean and correctly dressed at all times.
- To assist with or present regular training or coaching sessions, so that staff perform their duties correctly.
- Kitchen Staff Skill Development in Back of House
- To report any faults or defects to General Manager, paying particular attention to any safety or health hazard.
- Managing inventory so that all necessary ingredients are stocked for service with assistance of Kitchen Supervisors
- Streamlining the kitchen processes to maintain prompt service times
- Working with the General Manager to develop and maintain the restaurant menu
- Setting regular cleaning standards for the kitchen and verifying that staff is maintaining sanitation levels
- Creating schedules for all kitchen staff
- Tracking kitchen finances to identify areas of potential waste
- An intermediate understanding of GAAP Point of Sales System is critical

Requirements:
- Experience in the hospitality industry including some experience in Floor Management &
- Minimum 3 years' Experience as Kitchen Manager / Kitchen Chef
- Hospitality Degree or Chef's Course would be ideal
- 6 Shifts Per Week (Including working on Weekends)
- Own reliable transport and driver's license [
- Fluent in English
