I Did 4 Years training with Southén Sun Elangeni Durban from 1995 - 1999 thereafter I did 9 seasons in USA Miami Golf Estates. I returned to South Africa and was Sous Chef at OR Tambo and then Head Chef in Richards Bay Protea Hotels. I was a qualified NQ Assessor for Southern Sun and helped qualify 12 cooks to chef du Partie.  HACAP was trained every first week of the season at USA. I love to create… and not just with food… I love to paint and draw and am currently working on a book. My greatest concern as an old school chef is that the millenials all seam to believe that within a year after them leaving hotel school or culinary school… that they will be successful tv or YouTube “chefs” …. we need to re-ignite the passion in creating amazing food… the movie The Menu was about an artist's responsibility to keep creating…
